Moist cupcakes

White cake mix or Devils food cake mix
Pudding - vanilla or chocolate depending on cake mix (one large or 2 small)

Cream Cheese Rolls

1 tsp. sugar
2 pkg yeast
1/4 c warm water
6 c flour (watch it!)
1 1/2 c marjarine
1/2 tsp salt
4 egg yolks
1/2 c sugar
1 c powdered milk (make with warm water)
Filling
4 8 oz. cream cheese
4 egg yolks
dash of salt
1 whole egg
1/2 c sugar
1/2 tsp. cinnamon
*Mix yeast with warm water and 1 tsp. sugar. Let it foam up. Mix flour, salt, and cut in marjarine. Beat egg yolks, sugar, and warm milk. Add this and yeast mixture to flour. Knead 5 min. Divide dough into 5 pieces. Roll each one out thin, like a pizza. Cut rolled dough into 12 wedges. Put 1 tsp. filling on each wedge and roll up. Place on a lightly greased cookie sheet, tip of wedge up. Bake @ 350 for 20-25 min. Frost with glaze while warm.
*Filling- Mix cheese, eggs (yolks and whole egg), sugar, cinnamon, and salt. Mix with fork, don't whip/beat. Set aside until rolls are cut.

The Perfect Buttermilk Pancakes

2 cups flour
2 Tbsp sugar
2 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
2 c buttermilk
1/3 c milk
2 large eggs
1/4 c butter, melted (melt first so it has a chance to cool a little)
1. Combine flour, sugar, baking powder, baking soda and salt in a large bowl. Whisk until blended. Combine buttermilk, milk, eggs and melted butter in a medium bowl. Whisk until blended.
2.Heat a large non-stick griddle and when griddle is hot, add buttermilk mixture to dry ingredients; vigorously mix batter with a wooden spoon just until blended. If lumps are visible, that's okay.
3.Reduce heat to medium and grease griddle with butter, oil, or shortening. Using a ladle or a 1/3 c dry measure, pour spoonfuls of batter a few inches apart onto the hot greased griddle. Cook until small bubbles begin to form on the top and some pop, 2 to 3 minutes. Carefully turn pancakes with a flexible spatula, then cook 1 to 2 minutes more, until golden brown. (makes about 14 pancakes)

Crockpot Italian Chicken

4-6 chicken breasts
Mix 1 c water with 1 packet of Italian Seasoning mix.
Drizzle over chicken in the crockpot
Cook on low for 4 hours
Mix 1 can cream of chicken and 1 package cream cheese (room temp)
Stir into the juices and cook for 1 hour longer.
Serve with rice or noodles.

I use regular bread and it makes approx 16-18 slices.

Mrs. Fields Top Secret Chocolate Chip Cookies

*Preheat oven to 350 degrees.
1 c. (2 sticks) butter- softened
1/2 c. sugar
1 1/2 c. brown sugar
2 eggs
2 1/2 tsp vanilla
2 1/2 c. flour
3/4 tsp salt
1 tsp baking soda
1 tsp baking powder
1 bag chocolate chips
*Cream butter, sugar, eggs, and vanilla
*Mix flour, salt, soda, and powder
*Combine wet and dry ingredients
*Stir in chocolate chips
*Bake 10 min or until edges are light brown (I put them in for 9 minutes)
Makes approx. 30 cookies
